This turkey chili has become one of our favorite recipes for a healthy, plentiful meal prep. It takes under an hour to cook and makes great leftovers. It is full of nutrients and each serving (1.5 cups) contains an estimated 32g protein and 17g fiber.
Ingredients:
- 2 tsp olive oil
- 1 yellow onion
- 3 garlic cloves
- 1 red bell pepper
- 1 lb lean ground turkey meat
- 2 tsp cumin
- 1 tsp dried oregano
- ¼ cayenne pepper (optional – add for hotter and spicier chili)
- 3-4 tbsp of chili powder
- salt to taste
- 1 can diced tomatoes
- 1 ½ cup chicken broth
- 2 cans dark red kidney beans
- 1 can sweet corn
Directions:
- Peel and chop onion.
- Chop red pepper.
- Peel and mince garlic.
- Add olive oil to pot over medium-high heat.
- Add onion, pepper and garlic to pot and stir for 7 minutes.
- Add turkey to pot and break into small pieces, stirring and cooking until no longer pink.
- Mix seasonings (cumin, oregano, cayenne pepper, salt, chili powder) into the pot and stir for 30 seconds.
- To the side, drain and rise dark red kidney beans and corn. Then add to pot, along with diced tomatoes and chicken broth.
- Stir mixture, bring to boil, then reduce heat and simmer for 45 minutes.
- Add more seasoning to taste (optional).
- Remove from heat and top as desired! We recommend crackers, avocado, shredded cheese and sour cream.
