Bean Quesadillas
This protein-packed recipe is great for someone on a vegetarian or gluten-free diet.
Ingredients:
- ½ can refried beans ($2 per can)
- 1 Mission gluten-free tortilla ($6 per pack)
- ½ cup shredded cheddar cheese ($3 per bag)
- ½ cup sour cream ($2.50 per 16 oz)
- mild taco sauce to taste ($2 per 15 oz bottle)

Directions:
- Warm up a skillet over medium heat and add non-stick cooking spray to the surface.
- To the side, lay out the tortilla and spread a thin layer of beans across one half of it. Sprinkle that half with cheddar cheese.
- Fold the tortilla in half and press together lightly. There should now be equal parts beans and cheese in a half-circle quesadilla.
- Put quesadilla on warm skillet and cook each side until lightly golden.
- Remove from heat and add to a plate, cutting into triangular pieces.
- Dip each piece in sour cream and mild sauce to taste.
Spaghetti
This is a great comfort meal for those nights when you want a home-cooked meal.
Ingredients:
- 1 box spaghetti noodles ($2 per box)
- 1 pound ground beef ($7 per lb)
- 1 24-ounce jar of tomato and basil pasta sauce ($4 per jar)
- Grated parmesan cheese ($3 per 5 oz)
- Vegetable oil ($3 per 48 oz)

Directions:
- Add ¼ cup vegetable oil to a skillet over medium heat. Add ground beef to skillet, breaking it up with a spoon into smaller pieces to cook evenly. Stir meat until all of it is evenly brown.
- Add tomato sauce to the skillet and mix for around 6 minutes.
- Take a large pot and fill ¾ of the way with water, and add a dash of salt.
- Add the pot of water to another burner and bring water to a boil.
- Once water is boiling, add desired amount of spaghetti noodles to water and stir carefully. Cook for the length of time specified on the noodle box, or until the noodles are limp and soft.
- When noodles are fully cooked, use a strainer to drain the water from the noodles and place the noodles back in the empty pot.
- Add the sauce and beef mixture to the pot with the noodles and stir over a medium-low heat for a few minutes.
- Add spaghetti to bowl, and top with a garnish of shredded parmesan cheese.
BLT Sandwich
This is a simple, refreshing meal to enjoy even on warmer days.
Ingredients:
- 2 slides bread ($2 per loaf)
- 3 slices of fully-cooked bacon ($5 per pack)
- 3-5 leaves of iceberg lettuce ($3 per head)
- 1 beefsteak tomato ($2 each)
Total estimated average price for all ingredients: $12
Directions:
- First, wash lettuce and tomato. Then, pat dry.
- Add a layer of fully-cooked bacon to a microwave-safe plate, and microwave for the recommended amount of time, according to the box.
- Pull bacon out of microwave and pat grease with paper towels.
- Slice tomato horizontally.
- Pull leaves of iceberg lettuce off the head.
- Lay out one piece of bread on a plate.
- Layer the bacon, lettuce leaves and slices of tomato with equal parts of each.
- Add the top piece of bread and enjoy!
